What I made for dinner

Enchilada casserole from Cooking Light...
 Also a Mexican cabbage salad (which I made up), corn on the cob and a chipotle sauce for the corn, also from Cooking Light.
Cabbage salad:

Cabbage
White distilled vinegar
Red Wine vinegar
Sugar (about a tbl)
Lime juice
Vegetable oil (about a tbl)
Salt and pepper
2 dashes of cumin
